Pinterest Recipe- Portobello Wraps

I love Pinterest. What a GREAT idea. After my wedding my favorite thing to pin became recipes. I have made so many recipes I found on Pinterest it’s not even funny! Almost all of them have turned out great too. Today I’m sharing with you my adaptation of a recipe for portobello, roasted red pepper, and goat cheese wraps. These are so yummy and even my meat loving husband approves! This is SO easy, seriously anyone can do it.

Are you drooling yet? So my photos are not nearly as good or exciting as the original but whatever these babies taste delicious!

I took the original recipe and basically dumbed it down. It uses the grill and lots of spices. You can find the original recipe here. I only use 5 ingredients and make mine in a skillet. Here’s what you need.

Portobello, Roasted Red Pepper, and Goat Cheese Wraps

Serves 2 people with leftovers for lunch the next day!

1  4 oz. log of plain goat cheese (you could get the kind with herbs in it too that would be yummy!)

4 large portobello mushrooms chopped

1 small jar of roasted red peppers

small flour tortillas

avocado oil (or olive oil whatever you have on hand)

Directions

1.) Start by cleaning the portobello mushrooms by wiping them down with a damp paper towel. Never actually submerge mushrooms in water, they are like sponges and it will totally ruin your dish. Next chop them up into about one inch pieces.

2.) Chop up your roasted red peppers to the same size.

3.) Take your goat cheese out of the fridge, I like mine at room temp to easily smear on the tortillas.

4.) Next sautee your mushrooms in a large skillet with about a teaspoon of oil, until tender about 5-7 minutes. At the last minute toss in your roasted red peppers with the mushrooms just to warm them through.

5.) In another small skillet turn the heat on medium-high and spritz with avocado oil, add the first tortilla until lightly browned on one side, flip it over smear a little (or a lot) of goat cheese on the tortilla, then put some of the mushroom and pepper filling in. Top with another tortilla and flip the whole thing over so both sides are evenly browned.

6.) Turn the heat off and remove from the skillet. Cut into 4 pieces and serve immediately! Repeat step 5 again if you are serving more than one person.

Now I realize that mine are more like a quesadilla than anything but I don’t always make them like this. Sometimes I do the regular ‘wrap’ way which is just a little bit harder to flip in the pan. I use avocado oil because it is healthy and it also has a much higher heating point meaning it won’t burn as fast as some of the other types of cooking oils. My mom bought me one of those little oil spritz bottles so I can use as much as I need and not pour a ton in the pan, I think she bought it at homegoods. It’s really convenient!

I can’t even tell you how many times I’ve made these, and they are always so good, quick, and simple. Any beginning chef can master these! What to wear- Thanksgiving style

If you’re anything like me you like to plan special occasion outfits ahead of time. Especially now that I’m a mom I don’t have time right before an event or a night out to be trying on every outfit in my closet. I need to have a plan and be organized! Holidays are no different. Whether you are hosting or cooking or setting the table there is enough to worry about on Thanksgiving other than what you are going to wear. I have put together a few looks if you are searching for something to wear this year!

Wow, my mirror is so dusty! My apologies I’m gonna go clean that right now, haha. So obviously depending on how dressy or casual your family is on Thanksgiving will determine which look works for you. I will probably end up going for a version of the second to last photo. Leggings (stretchy to accommodate the feast!), a sweater, and over sized scarf. Comfy, cute, and casual. I was too lazy when taking these photos to add any other accessories, but you can definitely play each look up with a fun statement necklace, belt, or scarf. My first outfit post! Can you tell I struggled with the timer on my camera? Haha! It’s so hard to get it to focus correctly when you jump in after! The flash kept going off too. I have to get someone to take my next photos. Anyway this look is super casual yet cute. This faux leather jacket is my obsession. It instantly makes any outfit chic! I’m also loving this hat I just found at Target! It goes along with the plaid trend which is huge right now. I have a slight baseball hat addiction, I have so many. Most of them are summery colors and prints so it’s nice to find one that can be worn with darker colors in the colder months as well. Speaking of cold, it is freezing out today. In the last photo you can see the frost on our grass. The poor trees are bare too. Wahhh I’m not ready for cold! But am SO ready for Thanksgiving and then Christmas! Makeup Must Haves

Happy Monday friends! Today I’m going to be sharing with you some of my absolute favorite makeup products right now. Over the past few years I have slowly started gravitating toward more high end makeup and love the quality. There are still a few favorites that I use (and swear by!) that are drugstore finds.

1. You guys are going to think I’m totally nuts. I use this chafing relief gel as a foundation primer! I know what you’re thinking omg that’s so gross! I saw it on a few different beauty blogs a couple years ago and thought the same thing. But I swear it actually works! It has the same main ingredient in it as the way more expensive smashbox photo finish primer. I have acne prone oily skin and it has never made me break out. Seriously try it!

2. This concealer is awesome. Thanks to genetics I have super dark under eye circles and this is the ONLY concealer I have ever found to really brighten my under eye area! I use shade 1, which is one shade lighter than my face for a brightening affect.

3. This is the best highlighter EVER. If you watch any beauty gurus on youtube or read any beauty blogs you know that this shimmering skin perfector is a cult classic. The color opal is absolutely gorgeous.

4. I love this mascara for everyday, it has a primer on one end that you put on the tips of your lashes to extend them and then use the mascara end immediately after. I never get clumps using this.

5. This is one of those products you just have to bite the bullet and buy. At $54 it is not cheap but when you realize you’re getting 12 different shadows it seems much more worth it. I love a neutral brown shimmery eye and this palette is perfect for that.

6. The best brow product hands down. I have tried a lot of different ones. A few others by Anastasia Beverly Hills as well as Benefit and love this the best. I use shade soft brown.

7. This mascara is crazy! It makes your lashes so thick and full. I love using it for the roots as I feel like if I use too much on the ends it can get clumpy. The only thing I dislike about it is that it flakes when I curl my lashes after my mascara has dried. I’m bad I know you’re not supposed to do that but it’s the only way mine stay curled.

8. Best foundation ever. I love MAC products in general but this is my all time favorite foundation. I have tried other high end and low end options but always end up buying this one over and over. I wear shade NW 20.

9. I have been using this powder by cover girl since middle school. Not even kidding I’ve probably gone through like 40 of them. Like I said before I’m oily, even in the winter, so I need to set my foundation with a powder. This one gives me a little extra coverage, which I like as well. I wear shade Ivory 505.

I have become somewhat of a makeup junkie! I didn’t even get into lips, blush, bronzer, or brushes. Isla’s Birth Story- The Conclusion

After what felt like an ETERNITY, a third doctor from my practice comes in and says “I am soo sorry Dr. ____ had to do another emergency c-section!” Well ok I guess that’s a good reason not to come back, haha. But we were just so ready to do this and over the waiting game. They had let me hang out because I didn’t feel the urge to push (because I couldn’t feel anything!). Finally it was time! I think Kevin was much more nervous than I was. He stood behind me and gave me a cold washcloth in between contractions, not saying much. The reality of our lives changing was starting to sink in.

I pushed for some time and felt like we were going nowhere, pushing is really hard! Like a legit workout!  Little did I know Isla was preparing for her entrance! I was feeling a little light headed because I hadn’t eaten anything for about 18 hours. Because we had waited so long for me to start pushing the time between my contractions was about a minute apart and she was already so far down. So as her head was crowning (what they call “the ring of fire”) my contraction ended. I am sure I would have been screaming and swearing my head off at this point if I hadn’t have had the epidural. My doctor was like okay her head is right there! Right there! She has a lot of hair and it’s really light! Do you want to feel? At first I said omg no! Are you crazy?! Then I was like well okay when do you really get this chance, let’s do it. So I reached down and felt the top of her little head and couldn’t believe that was really coming out of me! The doctor says ok 2 more good pushes and she’s out.

I was sweaty and tired and wanted to hold her so badly I gave those last 2 everything I had and before I knew it I had a tiny baby on my chest, MY baby! OUR baby! At 2:11 pm after 45 minutes of pushing I had my sweet girl, Isla Elizabeth Burke. I immediately started crying it was just so freakin surreal. This was the tiny being that lived and thrived inside me for 9 whole months. Those were the little legs that danced around. The little arms that punched me from inside. The little lungs that got the hiccups every day past 25 weeks. It was such a miracle, I was in disbelief. She cried for a few brief seconds but immediately stopped when she was placed on my chest. It was honestly the most amazing moment of my entire life. I felt like I had a purpose. This was why God put me on this earth for this sweet pink baby girl. I just sat there crying in awe. It sounds so stupid but at that moment it was all finally real. The whole thing, the positive pregnancy test, growing belly, hearing the heartbeat. It finally clicked that she was mine, forever.

I don’t even really remember anything but her tiny face so close to mine and her body against me. Kevin cut the cord and I remember them saying she weighed 8lbs 1oz. Wait what?! Holy crap imagine if I had gone to 40 weeks! I would have had a 10 pounder! She was so sweet and snuggly. The nurse helped me get her in the right position for nursing and she caught on right away. After about 2 hours and calling and texting everyone to tell them about her arrival we were moved to our recovery room. That’s where she got her first bath and well we recovered. I finally got to eat! At this point I was starving, I ordered a grilled cheese and french fries and it was one of the best meals of my life. I loved the hospital food. We had lots of visitors that evening and were just on cloud nine.

It was easily the best day of my life. I get tons of questions on her name. We chose it because we like it, not for any other reason. I honestly don’t even remember where I heard it first but it stuck in my head as being very feminine and pretty. It is pronounced eye-la. It is a Scottish name meaning island. No we’re not Scottish. We chose Elizabeth as her middle name because it is my middle name and it just paired well. Longer more traditional middle name with a “unique” (although becoming much more popular now) short first name.

Isla’s Birth Story

A little back story. I had a very easy and enjoyable pregnancy all the way until the end. I seriously loved being pregnant. Minus the nauseousness from the first trimester. I was obsessed with reading people’s birth stories. I wanted to prepare for the unpreparable (is that a word? spell check says no) which is obviously impossible. I just wanted to know all possible outcomes. I did not go into labor with a birth plan because I knew it would probably go down the tubes anyway so I had the mentality whatever happens happens.

When you get to be about 36 weeks along you start going to the doctor every week for checkups. They check all the regular stuff like baby’s heartbeat, blood pressure, weight, protein in your urine, etc. But they also start cervical checks. Basically just to find out if your body is preparing for labor at all. They check for effacement and dilation. Before being pregnant I knew what dilation was but really didn’t know about effacement until we took a labor and delivery class. Basically effacement is when your cervix shortens completely to allow the baby to pass through the birth canal. Your cervix has to be 100% effaced and you must be at 10 cm dilated before you start pushing or else pushing would be a waste of time and effort.

I think I was 36.5 weeks at my first cervical check and I was told I was 70% effaced and 3 cm dilated. She said the baby could come anytime, anytime being that day or 2 weeks from then. I was like well gee that’s super helpful! All we knew was that my body was preparing itself and she was convinced I wouldn’t go all the way to my due date. So we go home super excited that baby was coming soon! A week goes by and nothing. BOO. Not even a single braxton hick contraction (practice contraction).

At 37.5 weeks I went back to the doctor and got checked again, this time I was 90% effaced and at 4 cm, woohoo! Things were moving along and I had no idea. When you go to the hospital you have to be at least 4 cm before they will even allow you to get an epidural and I was already there and didn’t even know it. We got really excited again. I remember seeing my mother in law the next day and she asked if I had any contractions and my response was “I have no idea, what do they feel like?” She told me when your whole stomach tightens really hard for a couple minutes and then relaxes. This is what I had heard from our class as well so that’s what I was waiting for…

On the morning of April 8th, 2014 I was 38 weeks pregnant. I woke up around 4:30 am from what felt like slight abdominal cramping. Very similar to what you would feel on your period. I knew right away this was it. I don’t know if it was just my body being ready or what but I had no doubt in my mind our baby girl would be born that day. I got up and went to the bathroom feeling like I peed a little. I thought I had because anyone who has been pregnant knows that at the end your bladder is the size of a pea. I figured it couldn’t be my water because it wasn’t a big gush. Well it was a slow leak. Gross. I would have rather started with the whole gush to get it out of the way but no. I was starting to get more and more uncomfortable and didn’t want to get back in bed and risk waking Kevin. I wanted him to be able to sleep as long as possible so at least we both weren’t totally exhausted. I went downstairs and laid on the couch for about an hour cringing and moaning through the contractions. When I finally came back up I stayed in the bathroom and thought hey maybe I should start timing these. They were about 6 minutes apart and getting more and more painful. I had to really focus on not making noise with each one passing over me.

Finally at 6 Kevin woke up. I told him this was definitely it and he kinda sorta went into crazy-packing-running-around panic mode. It was not helping me relax, like at all. This might sound totally stupid and superficial but I decided to put some makeup on before we left. I knew I was going to be photographed and wanted to look semi decent in the photos looking back. Luckily I had showered the night before because I did not feel like getting in the shower. Kevin was on pins and needles, I’m trying to do my makeup and pack up my last minute things all in between contractions that were 5 minutes apart at this point. He could not believe what I was doing he wanted to go to the hospital NOW. We live less than 5 minutes away and it wasn’t even 7 am. I knew there wouldn’t be traffic or anything and I was just trying to relax through each contraction. Yeah, wasn’t working.

Finally we get to the hospital around 7:15 am. I get into triage and put on my gown while I get checked. I was 100% effaced and almost 6 cm. This was definitely it! I got so nervous and so excited at the same time, it was such an insane feeling knowing today was the day we were going to get to meet her! We were assigned a room right away which was nice. I tried to just relax and breathe through my contractions until I knew I needed the epidural. I went in knowing I would want one, I’m a pretty big baby and no offense to anyone who chooses natural birth but I just knew that it wasn’t for me. I’m in the camp of the less pain possible the better. My awesome nurse Michelle called for the anesthesiologist at 8. He finally arrived at my room at 9. The second I swung my legs over the bed, my water broke. Like big gush broke. Ugh. Whatever at least I was getting some sweet drugs. To be totally honest the epi hurt pretty badly. But the sweet relief felt after was amazingggggggg. I was told I was still going to feel my contractions but they wouldn’t hurt. It took a little bit for the epi to kick in but when it did ummm I couldn’t feel anyyything. Like nada. I was totally and completely numb from the waist down.

We realized at this point we had forgotten my good camera. I couldn’t believe it! I called my mom who lives very close to us and the hospital she went to our house and brought us the camera. We kept her name a secret the whole pregnancy and even when my mom came in to drop the camera off she was like “Okay can you tell me the name now, I won’t tell anyone that I knew!” We were like um no! You have to wait until she’s born, you’ve waited this long you can wait a couple more hours. She was so mad haha. We just hung out for a while I was texting with my friends eating ice chips because I was SO thirsty and hungry. I hadn’t eaten or drank anything since dinner the night before. BIG mistake.

Michelle told us to just relax and try to rest until the doctor came and it was time to start the practice pushes. At that point I was at 7 cm. Closing my eyes and actually resting felt so good. I woke up about an hour later startled. It was 11 am and Kevin was asleep too. I looked over at him and said “what are we doing! I’m about to have a baby, this is NOT normal, we need to wake up!!!” We sat there waiting and waiting and waiting for what seemed like forever. Finally Michelle came back and checked me. I was at a 10 it was go time!

The doctor that was on call from my practice came in and said she would be back when the real pushing would begin but for now we were just going to start practicing and try to get the baby engaged. Ok cool. Let’s do this! At this point it became clear to me just how well my epi was working. I turned my head and Michelle was lifting my legs into the stirrups. Talk about out of body experience. It was SO weird. I was nervous I wouldn’t know if I was pushing right because I couldn’t feel a damn thing! We did some practice pushes for like 20 minutes and Michelle was happy with the progress. So she called the doctor in. We waited, and waited, and waited, she never came back. A second doctor from my practice comes in 30 minutes later and says “I’m so sorry she had to do an emergency c-section, so now I’m here! I will be right back and then let’s have a baby!!” At this point I am just SO anxious and excited to finally hold our sweet girl. Little did I know that the second doctor wouldn’t return either.

Honeymoon

It is the only adults only resort in Aruba and it was simply heaven. It was to date the best vacation of our lives. Wedding Recap

So this past August Kevin and I celebrated our 2 year wedding anniversary. It has been 2 years and I still never did a proper recap of our wedding day! So here goes. It was (at the time) the best day of my life. I had never felt so much love and happiness wrapped up in one day. We had the best time ever celebrating with our family and friends.
